Title: Peppered Cornbread

1 1/2 c Cornmeal
1 tb A-P flour
1 tb Sugar
2 1/4 ts Baking powder
3/4 ts Salt
1/2 ts Baking soda
2 lg Eggs; room temp, lightly
- beaten
8 1/4 oz Can cream-style corn
1 c Buttermilk
2/3 c Vegetable oil
2 c Shredded Cheddar cheese
1 md Red bell pepper; chopped
2 Jalapeno peppers; seeded,
- diced
5 Green onions; chopped
In a large bowl, combine the cornmeal, flour, sugar,
baking powder, salt and baking soda; set aside. In a
small bowl, combine the eggs, corn, buttermilk and oil;
stir into the dry ingredients just until blended. Fold
in the cheese, peppers and onions.
Pour into a greased 13" X 9" baking dish. Bake @
350ºF/175ºC until a toothpick inserted in the center
comes out clean, 30-35 minutes. Cut into squares; serve
warm.
