    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Hazelnut Fried Mushrooms
    Categories: Appetizers
    Yield: 4 Servings

    2 Eggs
    1/2 ts Salt
    1/8 ts Pepper
    1/8 ts Nutmeg
    1/3 c Ground hazelnuts (1-1/2 oz)
    1/2 c Fine dry bread crumbs
    1 lb Mushrooms; washed & dried
    All-vegetable shortening;
    - solid; for deep frying

    In small bowl, slightly beat eggs with salt, pepper, and nutmeg. In
    separate bowl, mix together Oregon hazelnuts and bread crumbs. Dip
    mushrooms in egg mixture, then coat with Oregon hazelnut mixture. Heat
    shortening to 365?F in deep pan and fry mushrooms, a few at a time,
    6 to 7 minutes, or until golden brown on all sides. Drain on paper
    towel and sprinkle with additional salt, if desired.

    The preceeding line says:

    So in this recipe, "Oregon hazelnut mixture" exactly consists of
    1/3 cup ground hazelnuts and 1/2 cup bread crumbs.

    Beer Batter Fried Green Tomatoes

    2 lg Green tomatoes -- thinly sliced
    2 ts Salt
    1/4 ts Pepper
    1 c Flour
    1 1/2 ts Baking powder
    1/2 c Beer
    1/4 c Fresh lemon juice
    1 c Vegetable oil
    1 pn Baking soda

    Arrange tomatoes on piece of waxed paper; salt & pepper both sides,
    using 1 ts of the salt & pepper. Combine flour, baking powder, baking
    soda, and remaining 1 ts salt in medium size bowl. Remove 1/2 cup of
    the mixture to a piece of waxed paper. Dip both sides of tomatoes in
    the 1/2 cup of flour mixture. Stir beer and lemon juice into
    remaining flour mixture. Mixture will foam. Stir until the
    consistency of pancake batter. Heat oil in large skillet. Dip
    tomatoes into batter and saute half at a time in hot oil until
    golden. Then saute the remaining tomatoes.

    That does sound good though. I like hazelnuts, especially in Nutella.

    Title: Creole-Style Red Beans & Rice

    1 lb Red beans
    8 Cloves garlic, chopped
    1 Rib celery, chopped
    1/4 lb Salami
    1 lb Smoked sausage
    1 Large onion, chopped
    1/4 Bell pepper, chopped
    1 ts Sugar
    Salt & pepper to taste
    1 pn Thyme
    1 lb Weiners

    Wash beans thoroughly; cover with water and place on medium fire. Chop
    sausage and salami and add to beans; add garlic celery, onions, green
    pepper, sugar, and thyme. Continue cooking until beans are soft,
    adding more water if necessary.

    When beans are soft, add weiners, sliced in 1" pcs., and salt and
    pepper to taste. Cook until gravy is thick and creamy. Serve over
    hot cooked rice.

    2 cl Garlic; finely chopped
    1/4 c Vegetable oil
    1/2 c Chicken broth
    4 c Tomatoes (4 md); chopped
    1 tb Groud red chiles
    1 ts Salt
    1 ts Ground cumin
    1 ts Dried oregano
    1/8 ts Pepper
    12 Tortillas (6 to 7");
    - corn or flour
    12 oz Mozzarella cheese; shredded
    Sour cream

    Cook and stir onion and garlic in oil in a 10" skillet over medium
    heat, until onion is tender. Stir in remaining ingredients except
    the sour cream, tortillas, and cheese. Heat to boiling then reduce
    the heat. Simmer, uncovered, for 30 minutes, stirring occasionally.
    Heat the oven to 350?F. Dip each tortilla into sauce to coat both
    sides. Spread 2 tb of the chease on each tortilla and roll up.
    Place seam sides down in an ungreased 13x9x2" baking dish. Pour
    remaining sauce over enchiladas and sprinkle with remaining cheese.
    Bake, uncovered, until the cheese is melted, about 15 minutes.
    Serve warm with the sour cream.
