• Maple Pecan French Toast

    Title: Maple Pecan French Toast
    Categories: Breakfast, Vegetarian
    Yield: 4 Servings

    3/4 c Pecans; toasted, chopped
    1 1/4 c Nondairy milk
    4 oz Soft silken tofu; drained
    1 ts Vanilla extract
    3/4 c Maple syrup
    8 sl Bread; whole grain or
    - sprouted

    Place 1/4 cup of the pecans in a blender and grind into a powder. Add
    the nondairy milk, tofu, vanilla, and 1/4 cup of the maple syrup and
    process until smooth.

    Pour into a large, shallow bowl and dip in the bread, coating both
    sides evenly with the batter.

    Preheat the oven to 200?F. Heat a lightly oiled griddle or large
    skillet over medium-high heat. Add the prepared bread in batches and
    cook until browned on both sides, 4 to 5 minutes total. Keep the
    cooked French toast warm in the oven while you prepare the remaining
    slices.

    In a small sauccepan, combine the remaining 1/2 cup maple syrup and
    the remaining 1/2 cup pecans and heat until warm. Spoon over the
    French toast and serve at once.
