• Skewered Shrimp On Wild Rice Pilaf

    Hi Ben,

I'm finally over the worst of the infection/antibiotic backlash, not
quite 100% tho. Next time I see the doctor I will ask him not to give me that antibiotic again; he'd given it to me once before with less of a reaction but the second time was harder and I don't want to risk a 3rd round.

Stephen had been doing all the cooking/clean up so for tonight's supper
he did Italian sausage with peppers, mushrooms and onions (all sauteed).

Good news! Glad to read you're back on real food now.
    That antibiotic sounds harsh.

It's one of those you only take for 5 days and it's supposed to keep
working like a 10 day regime. For some reason the pharmacy put 6 pills
in my bottle; I quit taking them after 5 because of the side effects so
    I've got one left--as a reminder.

As for real food, yes, it's good to eat again, tho in smaller
quantities. I'd been living off of next to nothing (tea, toast,
crackers)--not a reccommended way to lose weight but I needed some
nutrition. I'm now eating a "normal" breakfast (yogurt, toast, tea) and
supper, in small amounts but just nibbling--steamed egg, slice of
cheese, couple of crackers, bit of melon--for lunch. Probably better for
    me anyway.

These vegan energy balls use sunflower seeds, oats, coconut, lemon,
hemp seeds, and maple syrup. They make 12 healthy snacks with fiber
and omega-3's for busy days, meal prep, or after a workout.

Add the sunflower seeds to a high-speed blender and blend until
smooth. Add the oats and blend until they have the consistency of
    flour.

Add the sunflower seeds and oats to a large bowl with the coconut
oil, 1/2 cup (48 g) of shredded coconut, the lemon zest, lemon juice,
maple syrup, hemp seeds and salt. Stir to combine everything into a
    dough-like consistency.

Form the dough into balls of 2 to 3 tb (40 to 60 g) per ball. You
    should have approximately 12 balls.

Add the remaining 1/3 cup (32 g) of shredded coconut to a bowl and
roll the energy balls in the coconut. Place them on a clean plate and
refrigerate them for 20 to 30 minutes until they're set.

Refrigerate leftovers in an airtight container for up to 1 week.

It's mostly a matter of I just don't feel like eating much at that time
of day. Yesterday after church we went to Bibibop, an Asian fast food
chain with an outlet here in Wake Forest. I ordered a bowl with sweet
potato noodles, pickled onion, steamed broccoli, carrots and cucumber
with bulgogi and sesame/ginger sauce, ate about 1/3 of it with about a
half cup of miso soup. About 6 hours later I ate the rest of it.

i'll sub out something (raisins, dates, figs?) for the coconut but
otherwise they look good. Something to make up before we hit the road
since Stephen always gets the midafternoon munchies when we're
    travelling.
